This Parmesan Potato Scarpaccia is a delicious twist on the traditional Italian scarpaccia, which is typically made with zucchini. Instead, this recipe uses potatoes and Parmesan cheese, creating a crispy, savory treat. The crispy texture and rich flavor make it perfect on its own, or as a side dish with fried eggs or grilled fish. You can also serve it with homemade aioli for added flavor.

Full Recipe:

Ingredients:

  • 300g potato

  • 135g plain wheat flour

  • 120g water

  • 30g extra virgin olive oil

  • 45g Parmesan cheese (or plant-based alternative)

  • Salt and pepper, to taste

  • 1 tsp chopped rosemary

Directions:

  1. Prepare the Potatoes:

    • Wash the potatoes thoroughly and grate them into coarse strips. Place the grated potatoes into a bowl of cold water to help remove the starch.

    • Drain off the starchy water completely.

  2. Mix the Ingredients:

    • Add the water, flour, olive oil, grated Parmesan, salt, pepper, and rosemary to the potatoes.

    • Mix everything well with a wooden spoon until fully incorporated.

  3. Prepare the Pan:

    • Rub a 25cm cast iron pan (or any oven-safe dish) with some olive oil to prevent sticking.

    • Transfer the potato mixture into the pan and spread it evenly.

    • Drizzle with a little olive oil and top with extra grated Parmesan.

  4. Bake:

    • Preheat your oven to 180°C (350°F).

    • Bake the scarpaccia for 40-45 minutes until golden brown on top.

  5. Serve:

    • Once done, remove from the oven and slice. Serve and enjoy!
