Ingredients

  • 1 cup almond flour

  • 1 tbsp matcha powder

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp sea salt

  • 1/4 cup maple syrup

  • 1/4 cup coconut oil, melted

  • 1/2 cup coconut milk (or any non-dairy milk)

  • 1 tsp vanilla extract

  • 1 tbsp apple cider vinegar

Directions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

  2. In a medium-sized bowl, whisk together the almond flour, matcha powder, baking powder, baking soda, and sea salt.

  3. In a separate bowl, mix the maple syrup, melted coconut oil, coconut milk, vanilla extract, and apple cider vinegar.
