Ingredients

  • 12 ounces pasta (your favorite type)

  • 1 tablespoon olive oil

  • 1 small onion, chopped

  • 3 garlic cloves, chopped

  • 1 tablespoon Italian seasoning

  • ¼ teaspoon salt

  • 28-ounce can crushed tomatoes

  • 1 cup cottage cheese

  • Parmesan cheese (for serving)

Directions

  1. Bring a pot of water to boil and cook the pasta according to the package directions. Once ready, reserve ½ cup of pasta water, drain, and set aside.

  2. Blend the cottage cheese in a blender until smooth. This step ensures the cheese blends well with the tomato sauce.

  3. In a large skillet, heat olive oil over medium heat. Add chopped onions and cook for 2-3 minutes until soft. Add garlic, Italian seasoning, and salt, cooking for another minute until fragrant.
