For the dough

1 cup milk (250 ml)

2 and 1/4 tsp active dry yeast

1 tbsp sugar

4 tbsp olive oil

3 cups all-purpose flour (360 gms)

1 and 1/2 tsp salt

2 tsp mixed herb seasoning or Italian seasoning
For the filling

2 and 1/2 cups grated cheddar cheese

1 large onion, thinly sliced

2 tbsp olive oil

Warm the milk in a small bowl, stir in yeast and sugar, and let it become frothy for about 5 minutes.

In the bowl of a stand mixer or large mixing bowl, combine the yeast mixture and olive oil. Mix briefly.

Add the flour, salt, and seasoning. If using a stand mixer, knead for 3 to 4 minutes on medium-low speed until smooth. If kneading by hand, mix and knead for about 5 to 6 minutes.

Lightly oil the bowl, place the dough in it, cover, and let it rise for 1 to 2 hours until doubled.

Meanwhile, fry the onions in olive oil until lightly browned. Set aside.

Grease a 9×13-inch pan (or two smaller pans). When the dough has risen, punch it down and roll it out into a 12×16-inch rectangle.

Spread olive oil over the dough, then sprinkle with cheese and onions. Roll the dough tightly and slice into 12 equal pieces.

Arrange the rolls in the prepared pan(s), leaving space between them for the second rise. Cover and let rise for another hour.

Preheat the oven to 175°C (350°F). Sprinkle the remaining cheese on top of the rolls. Bake for 30-35 minutes, until golden brown and bubbly.
